Banana bread

Preparation time: Less than 30 minutes

Cooking time: 45 minutes

Makes: 1 loaf

A lovely soft springy banana loaf. Perfect for everyone to enjoy!

Its a very easy loaf to make, I promise! :)



Ingredients:

285g Plain flour
1tsp Bicarbonate of soda
½ tsp Salt
110g Butter
225g Caster sugar
2 Eggs
4 Bananas (mashed)
85ml Milk
1tsp Vanilla extract

Method:

1. Preheat the oven to 180­°C and line a 8x5 inch tin with greaseproof paper. In a bowl, sift the flour, bicarbonate of soda and salt. In a separate bowl, cream the butter and the sugar until light and fluffy.

2. Add the eggs, mashed bananas, milk and vanilla extract to the butter and sugar mixture and mix well until fully combined. Gently fold in the flour mixture until mixed.

3. Pour the mixture into the tin and bake in the oven for about 45 minutes or until a nice golden brown. When the loaf is cooked, take out of the oven and set aside to cool completely.
